Egg Roll in a Bowl

A deliciously easy twist on classic egg rolls, packed with savory flavors and vibrant vegetables.

Ingredients

  • 1 pound ground pork or chicken
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bag (14 oz) coleslaw mix
  • 3 green onions, chopped
  • 2 tablespoons soy sauce (or coconut aminos)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional toppings (sesame seeds, sriracha, creamy avocado)

Instructions

  1. Sauté the aromatics: In a large skillet or wok, heat a splash of sesame oil over medium-high heat. Add your diced onion and sauté for about 2-3 minutes until they become translucent and fragrant.
  2. Add the garlic: Toss in the minced garlic and cook for an additional minute.
  3. Brown the meat: Add the ground pork (or chicken) to the pan. Use a spatula to break it apart and let it brown for about 5-7 minutes.
  4. Incorporate the coleslaw mix: Once the meat is fully cooked, add the coleslaw mix and stir to combine everything. Cook for about 3-4 minutes until the cabbage is tender but still has a crunch.
  5. Season it up: Drizzle in the soy sauce (or coconut aminos) and stir. Taste and adjust seasoning with salt and pepper.
  6. Finishing touches: Toss in the chopped green onions and stir for another minute or so. Your Egg Roll in a Bowl is ready!
