Fairfax Breakfast Sandwich (Eggslut Copycat)

This recipe brings back the joy of sharing breakfast—whether it’s with a spouse, a friend, or just treating yourself to seconds. Inspired by the beloved Eggslut classic, the Fairfax Sandwich, this homemade version is rich with creamy eggs, sweet caramelized onions, and melted cheddar, all hugged by a buttery brioche bun. Make two and share the love this morning.

4 tbsp unsalted butter (divided)

1 tbsp cooking oil

1 large yellow onion, sliced

1/4 cup water

6 large eggs

3 tbsp chives, thinly sliced

3 tbsp mayonnaise

1.5 tbsp Sriracha

2 brioche buns, sliced

2 slices cheddar cheese

Salt and pepper to taste

Instructions

Caramelize the Onions:
In a skillet over medium heat, add oil, sliced onion, a pinch of salt, and 1 tbsp butter. Stir and spread in a single layer. Reduce heat and cook, stirring often, until golden and soft. Deglaze with water and simmer until fully caramelized. Keep warm.

Scramble the Eggs:
Crack eggs into a cool skillet. Stir until blended. Add 1 tbsp butter, cook on medium-low, stirring constantly. Add salt and chives, remove from heat when just set.

Make the Sauce:
Mix mayo and Sriracha in a small bowl (2:1 ratio).

Assemble the Sandwiches:
Toast brioche buns with remaining butter. Spread sauce on each bun. Add scrambled eggs, melt a slice of cheese for each, then top with caramelized onions. Serve warm.
