Fresh Greek Chicken Pasta Salad

  • 2 cups cooked pasta
  • 2 cups cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in boiling salted water according to the package instructions until al dente, about 9-11 minutes.
  2. Drain and cool the pasta by rinsing it under cold water.
  3. Prepare the chicken by shredding rotisserie chicken or cooking fresh chicken until juicy.
  4. Chop the cucumber, halve the cherry tomatoes, and dice the red onion and parsley.
  5. Assemble the salad by combining pasta, chicken, veggies, olives, feta, and parsley in a large bowl.
  6. Whisk together olive oil, vinegar, oregano, salt, and pepper in a separate bowl.
  7. Dress the salad with the dressing and toss gently.

Notes

Allow the salad to sit for 10-15 minutes before serving to let the flavors meld.
