These Fruity Pebbles cookies are a nostalgic, rainbow-hued twist on classic sugar cookies. With a buttery base, crisp edges, and a soft, chewy center, they’re bursting with fun flavor and crunch from the cereal you loved as a kid. 1 cup (2 sticks) unsalted butter, room temperature

¾ cup granulated sugar

¾ cup packed light brown sugar

2 large eggs

1½ tsp vanilla extract

3 cups all-purpose flour

2½ tsp baking powder

¼ tsp salt

1¼ cups Fruity Pebbles cereal

Optional Twist:

Fold in ½ cup white chocolate chips for a creamy touch

Add ¼ tsp almond extract for a hint of bakery-style flavor

Instructions

Preheat & Prep:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

Cream Butter & Sugar:
In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla, mixing until combined.

Dry Ingredients:
In a separate bowl, whisk together flour, baking powder, and salt. Slowly add to wet ingredients until a thick dough forms.

Fold in the Fun:
Gently stir in Fruity Pebbles (and chocolate chips if using) until evenly distributed.

Scoop & Bake:
Drop dough by rounded tablespoons onto prepared baking sheets. Bake 10–12 minutes, until edges are just golden. Do not overbake—they should stay soft!

Cool:
Let cool on baking sheet for 5 minutes, then transfer to a wire rack.
