Ingredients

Scale
  • 2 lb lean steak (trimmed & cubed into 1-inch pieces)
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • ¼ tsp crushed red pepper (optional)
  • 3 cloves garlic (minced)
  • 2 tbsp low-sodium beef broth
  • 1 tsp honey
  • 1.5 lb baby gold potatoes (quartered)
  • ½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder
  • 1 tsp paprika
  • 12 oz fresh green beans (trimmed)
  • ½ tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp garlic powder

Instructions

  1. Marinate the steak by combining soy sauce, balsamic vinegar, minced garlic, honey, garlic powder, salt, and black pepper in a large bowl. Add cubed steak and toss until coated.
  2. Preheat your oven to 400°F (200°C).
  3. Toss the quartered baby gold potatoes with olive oil, paprika, garlic powder, salt, and black pepper, then spread on a baking sheet.
  4. Roast the potatoes for 25-30 minutes until golden and tender.
  5. Heat a skillet over medium-high heat and add olive oil.
  6. Add the steak bites in a single layer, searing for 2-3 minutes on each side until browned.
  7. Make the sauce by pouring reserved marinade and beef broth into the skillet and simmering for 3-4 minutes.
  8. Toss the green beans with olive oil, salt, pepper, and garlic powder in another skillet and cook for 4-5 minutes until tender-crisp.
  9. Assemble and serve by plating the roasted potatoes, steak bites, and green beans, drizzling sauce over the steak.

Notes

For best flavor, marinate the steak longer. Feel free to try different sides or add spicy elements based on your taste.
