  • 1/2 cup beef broth
  • Fresh parsley for garnish

Instructions

  1. Prep Your Ingredients: Start by cutting your beef chuck into bite-sized pieces. Halve your baby potatoes.
  2. Season the Beef: In a large bowl, season the beef with salt, pepper, and dried thyme.
  3. Sear the Beef: Heat 1 tablespoon of garlic butter in a large skillet over medium-high heat. Add the seasoned beef in a single layer.
  4. Brown on All Sides: Let the beef cook undisturbed for about 3-4 minutes until it develops a nice crust. Flip the pieces over and brown on the other side.
  5. Cook the Potatoes: In the same skillet, add the remaining garlic butter and toss in the halved baby potatoes cut side down.
  6. Bring It All Together: Once the potatoes are golden and tender, pour in the beef broth and add the seared beef back into the skillet.
  7. Simmer and Stir: Stir everything together gently and let it simmer for about 10 minutes.
  8. Garnish and Serve: Remove from heat and sprinkle generously with fresh parsley.

Notes

For a lighter option, use olive oil mixed with minced garlic instead of garlic butter. Feel free to customize with additional vegetables or herbs.
