40 oz (2½ lbs) boneless, skinless chicken breasts, cut into bite-sized cubes
4 tbsp all-purpose flour
1 tsp dried oregano
1 tsp dried basil
1 tsp sweet paprika
1 tsp salt
Freshly ground pepper, to taste
2 tbsp olive oil
6 tbsp unsalted butter, divided
6 garlic cloves, minced
4 tbsp fresh parsley, chopped
Optional Twists:
Zest of 1 lemon + 1 tbsp lemon juice (for brightness)
A pinch of red chili flakes (for heat)
A sprinkle of grated parmesan before serving (for depth)
In a bowl, toss chicken pieces with flour, oregano, basil, paprika, salt, and pepper until evenly coated.
Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat.
Add chicken in batches (don’t overcrowd) and sear for 5–6 minutes, turning to brown all sides. Remove and set aside.
Lower heat, melt remaining 4 tbsp butter. Add garlic and sauté for 1 minute until fragrant.
Return chicken to the pan and toss to coat in the garlic butter. Add parsley (and any optional twists).
