Garlic Butter Chicken Crockpot Recipe

A comforting and flavorful garlic butter chicken dish made effortlessly in a crockpot, filled with chicken, potatoes, and carrots.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth

Instructions

  1. Prep the veggies: Wash and chop the baby red potatoes and carrots into bite-sized pieces.
  2. Add the chicken to the bottom of the crockpot.
  3. Layer the quartered red potatoes and carrot chunks on top of the chicken.
  4. Toss in the minced garlic.
  5. Mix the melted butter, Italian seasoning, salt, and pepper in a separate bowl, then pour over the chicken and veggies.
  6. Pour the chicken broth into the crockpot, ensuring it just covers the bottom.
  7. Set the crockpot to low for 6 hours.
  8. Final touches: Stir gently 30 minutes before serving, and garnish with chopped parsley if desired.
  9. Serve the chicken, shredded if you prefer, on a large platter.

Notes

Chicken thighs work well for juiciness. You can substitute with other vegetables or seasonings as desired.
