  • 1 pound thinly sliced chicken breasts
  • 16 ounces spaghetti
  • 5 tablespoons butter
  • 8 cloves garlic, minced
  • 3 tablespoons olive oil
  • ½ cup freshly grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Boil the pasta: In a large pot, bring salted water to a rolling boil. Add in the spaghetti and cook according to package instructions until al dente (8–10 minutes). Save a cup of the pasta water before draining.
  2. Cook the chicken: Heat a large skillet over medium heat. Add 2 tablespoons of olive oil and 2 tablespoons of butter. Once melted, add the chicken, season with salt and pepper, and cook for 5-6 minutes until golden brown.
  3. Sauté the garlic: Reduce the heat to low, add the minced garlic, and stir for 1-2 minutes until fragrant. Be careful not to let it brown.
  4. Combine everything: Add the cooked spaghetti to the skillet along with remaining butter and reserved pasta water. Toss gently to combine.
  5. Finish with cheese: Stir in the grated Parmesan until melted and creamy. Adjust seasonings with salt or pepper if needed.
  6. Serve immediately: Plate the pasta and garnish with more Parmesan and fresh parsley. Enjoy hot!
