Greek Chicken Bowls

A flavorful Greek Chicken Bowl featuring marinated grilled chicken on a bed of rice or quinoa, topped with fresh veggies and creamy tzatziki sauce.

  • 2 chicken breasts, boneless and skinless
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained

Instructions

  1. Marinate the chicken: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken and let marinate for at least 30 minutes.
  2. Cook your choice of grains: Cook rice or quinoa according to package instructions.
  3. Grill the chicken: Preheat grill or skillet, grill chicken for 6-7 minutes per side until cooked through.
  4. Prepare the tzatziki sauce: Mix Greek yogurt, grated cucumber, olive oil, lemon juice, and minced garlic in a bowl until smooth.
  5. Assemble your bowls: Start with rice or quinoa, add sliced chicken, top with veggies, feta, olives, and drizzle with tzatziki.

Notes

Feel free to use chicken thighs for more flavor. This dish is highly customizable with veggies and grains. For a vegan option, substitute chicken and feta with grilled vegetables and plant-based feta.
