Whimsical Greek Chicken Bowls

Delightful Greek Chicken Bowls packed with tender, marinated chicken, vibrant veggies, fluffy rice, and a creamy tzatziki sauce.

  • 2 pounds chicken breasts or thighs, diced
  • 3 tbsp olive oil
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 2 tbsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 cups cooked rice
  • 2 cups cherry tomatoes, halved
  • 2 cucumbers, diced
  • 1 red onion, thinly sliced
  • 1 cup kalamata olives
  • 1 cup feta cheese, crumbled
  • Fresh parsley or dill for garnish
  • 1 cup Greek yogurt
  • 1 cucumber, grated and squeezed dry
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill
  • Salt & pepper, to taste

Instructions

  1. Marinate the chicken: In a large mixing bowl, combine chicken, olive oil, lemon juice, garlic, oregano, basil, salt, and pepper until well-coated and marinate for at least 30 minutes.
  2. Cook the rice: Prepare rice according to package instructions.
  3. Grill the chicken: Heat grill pan over medium-high, cook marinated chicken for 6-7 minutes on one side, flip and cook for another 5-6 minutes until golden and cooked through.
  4. Prep the veggies: Halve the tomatoes, dice cucumbers, and slice the red onion while the chicken cooks.
  5. Make the tzatziki sauce: In a medium bowl, combine grated cucumber, Greek yogurt, minced garlic, lemon juice, dill, and seasonings.
  6. Assemble the bowls: Layer rice, grilled chicken, fresh veggies, olives, feta, and a dollop of tzatziki. Garnish with parsley or dill.
  7. Enjoy your delicious creation with family and friends!

Notes

Customize with your favorite veggies or swap chicken for chickpeas for a vegetarian version.
