Greek Chicken Bowls

Delightful Greek Chicken Bowls, marinated chicken served on a bed of quinoa or brown rice, topped with fresh veggies and tzatziki.

  • 1 lb Chicken Breasts
  • 3 tbsp Olive Oil
  • 3 cloves Garlic, minced
  • Juice of 1 Lemon
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 Cucumber, chopped
  • 1 cup Cherry Tomatoes, halved
  • 1 Red Onion, chopped
  • 1 Bell Pepper, chopped
  • 1 cup Quinoa or Brown Rice
  • 1 cup Tzatziki Sauce

Instructions

  1. Marinate the Chicken: Combine chicken, olive oil, garlic, lemon juice, salt, and pepper in a bowl. Cover and let marinate for at least 30 minutes.
  2. Cook the Quinoa or Rice: Prepare quinoa or brown rice according to package instructions.
  3. Grill or Sauté the Chicken: Preheat grill or skillet and cook chicken for 6-7 minutes on each side until fully cooked.
  4. Prepare Fresh Veggies: Chop cucumber, tomatoes, onion, and bell pepper. Toss in a bowl and season.
  5. Make the Tzatziki: Combine yogurt, grated cucumber, minced garlic, and dill in a bowl and stir.
  6. Assemble Your Bowls: Layer quinoa or rice, sliced chicken, fresh veggies, and drizzle tzatziki on top.

Notes

Feel free to customize the veggies and protein. This dish is adaptable and can cater to vegetarian diets by swapping chicken for chickpeas or tempeh.
