For the Greek Chicken:
1.5 lbs (700g) chicken breast or thighs, chopped
1/2 cup Greek yogurt
2 tbsp olive oil
Juice of 1 lemon
3 cloves garlic, minced
1 tsp dried oregano
Salt & pepper to taste
For the Rice:
1 cup long grain rice
2 cups chicken broth
1 tbsp olive oil
1 tsp dried dill or parsley
Pinch of salt
For the Tzatziki Sauce:
1/2 cup Greek yogurt
1/2 cucumber, grated and drained
1 tbsp lemon juice
1 clove garlic, minced
1 tbsp fresh dill (or 1 tsp dried)
Salt to taste
Optional Bowl Add-ins:

Red onion, thinly sliced
Mix all chicken marinade ingredients. Add chicken, toss to coat, and marinate at least 30 minutes (or overnight).
