Heart Healthy Greek Chicken Salad

A heart-healthy twist on the traditional Greek chicken salad, bursting with fresh vegetables, herbs, and grilled chicken.

  • 2 boneless skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: In a bowl, whisk together olive oil, lemon juice, salt, pepper, and oregano. Marinate the chicken for at least 30 minutes.
  2. Grill the chicken: Preheat the grill to medium-high heat. Grill the chicken for 6-8 minutes on each side until cooked through.
  3. Chop the vegetables: While the chicken is grilling, prepare the cherry tomatoes, cucumber, red onion, and fresh herbs.
  4. Assemble the salad: In a large bowl, combine the tomatoes, cucumbers, onions, olives, and herbs. Slice the grilled chicken and add it to the salad along with the feta cheese.
  5. Dress the salad: Drizzle olive oil and remaining lemon juice over the salad, and season with salt and pepper to taste. Toss gently.
  6. Serve: Let the salad sit for 10 minutes before serving for flavors to meld.

Notes

Consider adding diced avocado or grilled portobello mushrooms for variations. This salad can be prepared ahead of time, but dress just before serving for best freshness.
