This Greek yogurt Caesar chicken salad is a lighter, protein-rich twist on the classic. It swaps heavy dressing for a creamy Greek yogurt Caesar blend while keeping all the flavor you crave. Perfect for a satisfying lunch, dinner, or easy meal prep.
For the Salad:
2 cups cooked, chopped chicken breast (grilled or rotisserie)
6 cups chopped romaine lettuce
½ cup cherry tomatoes, halved
¼ cup shredded Parmesan cheese
½ cup croutons (optional)
Fresh cracked pepper to finish
For the Greek Yogurt Caesar Dressing:
½ cup plain nonfat Greek yogurt
1 tbsp olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
1 tsp Worcestershire sauce
1 clove garlic, minced
2 tbsp grated Parmesan cheese
Salt and pepper to taste
