Greek Yogurt Chicken Salad

A deliciously creamy and healthy chicken salad made with Greek yogurt, perfect for summer picnics or brunch gatherings.

  • 2 cups cooked chicken, shredded
  • 1 cup plain Greek yogurt
  • 1/2 cup celery, chopped
  • 1/2 cup red grapes, halved
  • 1/4 cup red onion, finely chopped
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Lettuce leaves (for serving)

Instructions

  1. Shred the chicken. If using a rotisserie chicken, remove skin and shred meat.
  2. Combine the shredded chicken, chopped celery, halved grapes, chopped red onion, and Dijon mustard in a large mixing bowl.
  3. Add the Greek yogurt gradually, mixing until all ingredients are coated.
  4. Season to taste with salt and pepper.
  5. Refrigerate for at least 30 minutes to let the flavors meld together.
  6. Prepare your serving dish with washed and dried lettuce leaves before serving.
