Healthy Chicken Salad

A light yet filling chicken salad combining rotisserie chicken, creamy mayonnaise, and refreshing veggies, perfect for lunches or picnics.

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Lettuce leaves for serving

Instructions

  1. Shred the chicken into bite-sized pieces.
  2. Prep the veggies by dicing the celery and red onion.
  3. Mix the shredded chicken, mayonnaise, and Greek yogurt in a large bowl.
  4. Toss in the diced celery and red onion, stirring gently.
  5. Season with salt and pepper to taste.
  6. Chill in the fridge for at least 30 minutes.
  7. Serve on lettuce leaves, in a sandwich, or on crackers.
  8. Garnish with fresh herbs or cherry tomato halves if desired.
