1 ½ lbs flank or skirt steak

2 tbsp olive oil

Juice of 1 lemon

2 garlic cloves, minced

1 tsp dried oregano

Salt and black pepper to taste

Bowl Base Options:

2 cups cooked quinoa, farro, couscous, or brown rice

Veggie Toppings:

1 cup cherry tomatoes, halved

1 cup cucumber, diced

/4 cup red onion, thinly sliced

1/4 cup kalamata olives, sliced

1/4 cup crumbled feta cheese

Instructions

Marinate the steak: Mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Rub over steak and marinate for 30 minutes (or up to 8 hours).
