It’s layered with tender sweet potatoes, seasoned ground turkey, and aromatic herbs for a dish that’s filling, simple, and packed with nutrients. 2 large sweet potatoes, peeled and thinly sliced
1 lb ground turkey
1 small onion, diced
2 cloves garlic, minced
1 tsp paprika
1 tsp dried thyme
Salt and pepper, to taste
2 tbsp olive oil
Fresh parsley, chopped (for garnish)
Preheat oven to 375°F (190°C).
In a large skillet, heat 1 tbsp olive oil over medium heat. Sauté onion until soft, then add garlic and cook 1 minute.
Add ground turkey, paprika, thyme, salt, and pepper. Cook until browned and fully cooked through.
In a greased baking dish, layer sweet potato slices and the turkey mixture. Drizzle remaining olive oil over the top.
Cover with foil and bake for 35 minutes. Remove foil and bake uncovered for another 10–15 minutes, until potatoes are tender and slightly golden.
Garnish with fresh parsley and serve warm.
