Hearty Blueberry Protein Muffins

Delicious muffins packed with wholesome oats, blueberries, and Greek yogurt, perfect for a quick breakfast or snack.

  • 1 cup rolled oats
  • 1 cup Greek yogurt
  • 1/2 cup almond milk
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 cup blueberries (fresh or frozen)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin.
  2. Mix the rolled oats, baking powder, baking soda, salt, and protein powder in a large mixing bowl.
  3. Cream the eggs and then add Greek yogurt, almond milk, honey or maple syrup, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and stir gently until just combined.
  5. Fold in the blueberries carefully.
  6. Fill the muffin liners about two-thirds full with the batter.
  7. Bake for about 18-20 minutes until a toothpick comes out clean.
  8. Cool the muffins for a few minutes, then transfer them to a wire rack.

Notes

These muffins freeze wonderfully; wrap them in plastic wrap for storage.
