Hearty Chicken Noodle Soup

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Sauté the Base: In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add the Garlic: Next, add minced garlic and cook for about 1 minute until fragrant.
  3. Toss in the Veggies: Add sliced carrots and celery; sauté for 5-7 minutes until tender.
  4. Pour in the Broth: Add chicken broth and bring to a gentle boil then reduce to a simmer.
  5. Add Chicken and Noodles: Stir in shredded chicken and egg noodles, cooking for about 10 minutes until noodles are al dente.
  6. Season it Up: Add dried thyme and oregano; season with salt and pepper to taste.
  7. Fresh Finish: Stir in fresh parsley just before serving.

Notes

For extra richness, consider adding a splash of cream or sour cream. Cook noodles separately if storing leftovers to prevent mushiness.
