High-Protein Creamy Garlic Cheesy Chicken & Potatoes

A delicious and protein-packed creamy garlic cheesy chicken and potatoes dish, perfect for busy weeknights or cozy family dinners.

  • 800g chicken breast, cubed
  • 34 garlic cloves, minced
  • 2 tsp onion powder
  • 2 tsp mixed herbs
  • 1 tsp chili flakes
  • 2 tsp paprika
  • 1 tsp salt
  • 2 tsp olive oil
  • 800g uncooked potatoes, cubed
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp mixed herbs
  • 1 tsp chili flakes
  • 1 tsp paprika
  • 120ml milk (any type)
  • 100g light cream cheese
  • 40g grated Parmesan
  • 50g shredded mozzarella
  • Fresh parsley for garnish

Instructions

  1. Prepare the potatoes by tossing cubed potatoes with olive oil (if using), salt, garlic powder, mixed herbs, chili flakes, and paprika in a large bowl.
  2. Cook the potatoes by preheating the oven to 200°C (400°F) and baking them for 20-23 minutes, flipping halfway.
  3. Sauté the chicken in a skillet with olive oil, onion powder, mixed herbs, chili flakes, paprika, and salt for about 8-10 minutes until golden.
  4. Make the creamy sauce by combining milk and cream cheese in a saucepan; add Parmesan and mozzarella until melted and creamy.
  5. Combine the crispy potatoes and sautéed chicken, then drizzle with creamy sauce and stir gently.
  6. Serve garnished with fresh parsley and enjoy!

Notes

For extra crunch, soak potatoes in cold water for 30 minutes before cooking. Use a meat thermometer to check chicken doneness.
