  • 1/3 cup coconut flour
  • 1/4 cup maple syrup
  • 1 cup dark or semi-sweet chocolate chips
  • 1/2 tablespoon coconut oil

Instructions

  1. Mix the Peanut Butter Mixture: In a large mixing bowl, combine 1 cup of creamy peanut butter, 1/3 cup of coconut flour, and 1/4 cup of maple syrup.
  2. Shape the Eggs: With clean hands, scoop out a generous tablespoon of the mixture and shape it into an egg-like form.
  3. Chill to Firm: Place your peanut butter eggs on a parchment-lined baking sheet and pop them in the freezer for about 30 minutes.
  4. Melt the Chocolate: In a microwave-safe bowl, combine 1 cup of chocolate chips and 1/2 tablespoon of coconut oil. Microwave in 30-second intervals, stirring between each until smooth and melted.
  5. Dip the Eggs: Retrieve your chilled peanut butter eggs from the freezer and dip each egg into the melted chocolate, allowing excess chocolate to drip off.
  6. Chill Again: Return the dipped eggs to the baking sheet and let them set in the refrigerator for about 15-20 minutes until the chocolate is firm.
