Honey Cilantro Lime Chicken Bowl

  • 2 boneless, skinless Chicken Breasts
  • 1/4 cup Honey
  • 1/4 cup Freshly squeezed Lime Juice
  • 1/2 cup chopped Cilantro
  • 2 tablespoons Olive Oil
  • Salt to taste
  • Freshly cracked Black Pepper to taste
  • 1 Avocado, sliced
  • 1 cup Corn (fresh, canned, or frozen)
  • 1 cup Cherry or Grape Tomatoes, halved

Instructions

  1. Marinate the chicken by combining honey, lime juice, cilantro, olive oil, salt, and pepper in a bowl.
  2. Let the chicken marinate for at least 30 minutes or overnight for more flavor.
  3. Heat the grill to medium-high and cook the marinated chicken for 6-7 minutes per side until cooked through.
  4. Prepare the veggies by slicing the tomatoes and avocado, and cutting corn kernels from the cob if using fresh.
  5. Assemble the bowl with a base of rice or quinoa, topped with corn, tomatoes, avocado, and sliced chicken.
  6. Drizzle with the leftover marinade and garnish with extra cilantro before serving.
