Honey Garlic Chicken and Sweet Potatoes

A delicious and comforting Honey Garlic Chicken dish paired with creamy roasted sweet potatoes and vibrant green beans, perfect for any weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Prepare the chicken marinade: In a mixing bowl, combine honey, soy sauce, minced garlic, paprika, dried thyme, salt, and black pepper. Whisk together until well combined.
  2. Place the chicken breasts in a zip-top bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, and let it marinate in the fridge for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C).
  4. Prepare the sweet potatoes: Place the cubed sweet potatoes on a baking sheet, drizzle with a tablespoon of olive oil, and season with salt and pepper. Toss to coat.
  5. Roast the sweet potatoes in the oven for about 25-30 minutes, or until tender and lightly caramelized.
  6. Cook the chicken: Heat a large skillet over medium heat and add a tablespoon of olive oil. Once hot, add the marinated chicken breasts and cook for about 6-7 minutes per side until cooked through.
  7. Add the green beans: In the same skillet, add the trimmed green beans and sauté for about 5-7 minutes until tender but still crisp.
  8. Combine and serve: Slice the chicken breasts, arrange them alongside the sweet potatoes and green beans on a serving platter, and drizzle any leftover marinade over the top.

Notes

For added flavor, you can sprinkle a touch of paprika over the sweet potatoes and a squeeze of fresh lemon juice over the green beans before serving.
