Honey Lime Chicken & Avocado Rice Stack

A delightful summer dish with honey lime glazed chicken, fluffy rice, creamy avocado, and fresh cilantro.

  • 1 lb chicken breasts (boneless, skinless)
  • 1/4 cup honey
  • 2 limes (juiced)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper (to taste)
  • 1 cup rice (uncooked)
  • 1 avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream

Instructions

  1. Marinate the chicken: Mix honey, lime juice, chili powder, cumin, salt, and pepper. Coat chicken and marinate for at least 30 minutes.
  2. Cook the rice: Rinse rice, boil 2 cups of water, add rice and salt, cover, and cook for 18 minutes.
  3. Grill the chicken: Preheat grill, cook chicken for 6-7 minutes per side until reaching 165°F.
  4. Assemble the stack: Layer rice, chicken, diced avocado, cilantro, and drizzle with sour cream.
  5. Enjoy! Serve warm and relish every bite!

Notes

For added flavor, consider adding lime zest to the rice or garnishing with extra lime wedges.
