For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

2 tbsp honey

Zest of 1 lime

Juice of 2 limes

2 cloves garlic, minced

Salt and pepper, to taste

For the Bowls:

2 cups cooked jasmine or brown rice

1 cup steamed broccoli

1 cup cherry tomatoes, halved

1 avocado, sliced

Optional: chopped cilantro, chili flakes, or lime wedges

Instructions

In a bowl, whisk honey, lime juice, zest, garlic, salt, and pepper.

Heat oil in a pan over medium heat. Add shrimp and cook 2–3 minutes per side. Pour glaze over and cook until slightly thickened (1–2 more minutes).

Divide rice between 4 containers. Add shrimp, broccoli, tomatoes, and avocado.

Garnish with cilantro or lime wedges if desired.

Store in the fridge for up to 4 days.
