Honeycrisp Apple Broccoli Salad

A vibrant and refreshing salad combining fresh broccoli, sweet Honeycrisp apples, and tangy dressing for a delicious crunch.

  • 4 cups fresh broccoli florets
  • 2 Honeycrisp apples (diced)
  • 1/2 cup red onion (finely chopped)
  • 1/2 cup dried cranberries
  • 1/2 cup sunflower seeds
  • 1/2 cup crispy bacon bits (optional)
  • 1/2 cup Greek yogurt
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Prepare the broccoli: Wash and pat dry the broccoli florets. Optionally, blanch them for 1-2 minutes and plunge into ice water.
  2. Dice the Honeycrisp apples: Core and chop into bite-sized pieces, tossing with lemon juice to avoid browning.
  3. Chop the red onion: Finely chop and soak in cold water if needed to mellow the flavor.
  4. Mix the dressing: Combine Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper in a bowl and whisk until smooth.
  5. Combine everything: In a large bowl, mix broccoli, apples, red onion, cranberries, sunflower seeds, and bacon bits if using.
  6. Add the dressing: Drizzle dressing over salad and toss gently to coat without squishing the apples.
  7. Chill the salad: Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

This salad can be made ahead of time; just add the dressing before serving to keep it fresh.
