Italian Love Cake

A delightful Italian dessert featuring layers of creamy ricotta cheese and rich chocolate cake, topped with fluffy whipped topping—perfect for any occasion.

  • 2 15-ounce containers of ricotta cheese
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 4 large eggs (room temperature)
  • 1 15.25-ounce box of chocolate or devil’s food cake mix
  • 1/2 cup canola or vegetable oil
  • 1 cup of water
  • 3 large eggs (for the pudding layer)
  • 1 5-ounce box of instant chocolate pudding mix
  • 3 cups of cold milk
  • 1 8-ounce container of whipped topping, thawed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish by greasing and flouring it.
  3. Mix the ricotta cheese, granulated sugar, vanilla extract, and eggs in a bowl until smooth.
  4. Combine the chocolate cake mix, oil, water, and remaining eggs in another bowl until just mixed.
  5. Pour half of the chocolate cake batter into the baking dish, then spread the ricotta mixture on top, followed by the remaining cake batter.
  6. Bake for 45-50 minutes or until a toothpick comes out clean.
  7. Whisk together the instant pudding mix and cold milk while the cake is baking until thick.
  8. Cool the cake for 15 minutes before removing it from the pan to cool completely.
  9. Pour the chocolate pudding over the cooled cake and top with whipped topping.
  10. Chill in the fridge for at least 4 hours before serving.

Notes

Add a dusting of cocoa powder or powdered sugar before serving. This cake can be made ahead of time and tastes even better the next day.
