Juicy Pineapple Heaven Cake

A delightful tropical cake made with juicy pineapple and a buttery sweet crumb, perfect for any gathering.

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup white sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup crushed pineapple, well-drained
  • 1/2 cup icing sugar
  • 2 tbsp pineapple juice

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar until it’s light and fluffy—about 3-5 minutes.
  4. Add Eggs and Vanilla: Next, add the eggs, one at a time, beating well after each addition, and mix in the vanilla extract.
  5. Combine Wet and Dry Ingredients: Gradually add the flour mixture to the butter mixture, alternating with sour cream and crushed pineapple, mixing until just combined.
  6. Pour and Bake: Carefully pour the batter into the prepared cake pan, smooth the top, and bake for about 25-30 minutes or until a toothpick comes out clean.
  7. Cool the Cake: Once done, remove it from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  8. Make the Icing: While cooling, whisk together the icing sugar and pineapple juice until smooth.
  9. Drizzle and Serve: Once cooled, drizzle the icing over the cake and serve.

Notes

For an extra tropical touch, consider adding shredded coconut or a mashed banana to the batter. This cake can also be made vegan by substituting flax eggs and coconut oil.
