Juicy Pineapple Heaven Cake

A delightful cake bursting with juicy pineapple, perfect for summer gatherings and celebrations.

  • 1 tsp salt
  • 1 tsp baking powder
  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter (softened)
  • 1 cup white sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup crushed pineapple (well-drained)
  • 1/2 cup icing sugar
  • 2 tbsp pineapple juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter or cooking spray.
  3. Mix the salt, baking powder, and flour in a bowl until combined.
  4. Beat the butter and sugar together until light and fluffy.
  5. Add the eggs one at a time, stirring in the vanilla extract.
  6. Incorporate the sour cream until smooth.
  7. Combine in the well-drained crushed pineapple.
  8. Combine the wet and dry mixtures until just combined.
  9. Pour the batter into the prepared pan.
  10. Bake for 30-35 minutes or until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack.
  12. Prepare the icing by whisking icing sugar and pineapple juice.
  13. Frost the cooled cake with the icing.
  14. Garnish with fresh pineapple, cherries, or coconut flakes if desired.
  15. Slice and serve with a smile!

Notes

This cake pairs beautifully with vanilla ice cream or whipped cream. It can also be made ahead and stored in an airtight container.
