Ingredients

  • Kale
  • Pasta (whole wheat penne recommended)
  • Crispy Chickpeas
  • Creamy Caesar Dressing
  • Salt
  • Pepper
  • Parmesan Cheese (optional)

Instructions

  1. Prepare the Pasta: Boil salted water and cook pasta until al dente, drain, and rinse under cold water.
  2. Preheat your oven to 400°F (200°C) for the Crispy Chickpeas.
  3. Rinse and drain chickpeas, pat dry, coat with olive oil, salt, and pepper, then roast until golden (20-25 minutes).
  4. Prepare the Kale: Rinse, dry, tear into pieces, and massage with olive oil and salt.
  5. Mix the Salad: Combine pasta, kale, and chickpeas, add dressing, and toss well.
  6. Serve and Finish: Season with salt and pepper, top with Parmesan cheese if desired.
