Kale Caesar Pasta Salad

A delightful twist on the classic Caesar salad, this Kale Caesar Pasta Salad combines crispy kale, creamy dressing, and al dente pasta for a hearty meal.

Ingredients

Scale
  • 8 oz pasta (rotini or penne recommended)
  • 2 cups kale, chopped
  • 1/4 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup croutons
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a pot of salted boiling water according to package instructions until al dente, about 8–10 minutes. Reserve 1 cup of pasta water before draining.
  2. Prepare the kale by removing tough stems and chopping the leaves. Massage with a sprinkle of salt and a squeeze of lemon juice.
  3. Mix the dressing by combining Caesar dressing, grated Parmesan, and a splash of reserved pasta water in a large bowl.
  4. Combine the cooked pasta with the kale in the mixing bowl, tossing gently to coat.
  5. Add croutons and toss lightly to keep them crunchy.
  6. Serve by plating the salad and garnishing with extra Parmesan and a twist of pepper.
