1.5 lbs chicken breasts or thighs, cut into chunks
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
Salt & pepper to taste
1 (4 oz) can diced green chilies
½ cup sour cream
4 oz cream cheese, softened
½ cup shredded cheddar cheese
½ cup shredded Monterey Jack or mozzarella
Optional: chopped cilantro or green onion for garnish
Preheat oven to 375°F (190°C).
Heat olive oil in an oven-safe skillet and sear chicken until golden and mostly cooked through.
In a bowl, mix green chilies, sour cream, cream cheese, garlic powder, onion powder, salt, and pepper.
Pour mixture over chicken. Top with shredded cheeses.
Bake uncovered for 15–20 minutes until bubbly and golden.
Garnish with fresh herbs and serve hot!
