1 whole chicken (about 4 lbs), patted dry
4 garlic cloves, minced
2 lemons (zest + juice, plus wedges for roasting)
2 tbsp olive oil
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme leaves
1 tbsp fresh parsley, chopped
Salt and black pepper
1 small onion, quartered
Optional: baby potatoes or carrots for roasting alongside
Preheat oven to 425°F (220°C).
In a small bowl, mix olive oil, garlic, lemon zest and juice, rosemary, thyme, parsley, salt, and pepper.
Rub mixture all over the chicken, including under the skin for extra flavor.
