  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the Orzo: Start by bringing a large pot of salted water to a boil. Once boiling, add your orzo and cook according to package instructions (usually about 8-10 minutes). Drain and rinse under cold water.
  2. Prep Your Veggies: Halve the cherry tomatoes and dice the cucumber, finely chop the red onion, and coarsely chop the parsley.
  3. Make the Dressing: In a small bowl, combine the olive oil, lemon juice, salt, and pepper. Whisk it together until emulsified.
  4. Combine It All: In a large mixing bowl, toss the cooled orzo with the veggies and feta cheese. Drizzle the dressing over and toss to combine.
  5. Let It Chill: Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
