This Mediterranean Pasta Bowl is a vibrant, veggie-packed dish that brings the sun-soaked flavors of the Mediterranean straight to your table. Ingredients

8 oz cooked pasta (orzo, rotini, or penne)

1 cup cucumber, diced

½ cup cherry tomatoes, halved

⅓ cup pitted kalamata olives, sliced

¼ cup red onion, thinly sliced

½ cup crumbled feta cheese

2 tablespoons chopped fresh parsley or mint

Lemon Vinaigrette

3 tablespoons olive oil

1½ tablespoons lemon juice

1 teaspoon Dijon mustard

1 small garlic clove, minced

Salt and black pepper, to taste

Instructions

Cook and Cool the Pasta
Cook pasta until al dente. Drain, rinse under cool water, and set aside.

Make the Vinaigrette
In a small jar or bowl, whisk together olive oil, lemon juice, Dijon, garlic, salt, and pepper until well combined.

Assemble the Bowl
In a large bowl, combine pasta, cucumber, tomatoes, olives, red onion, and parsley. Toss with the vinaigrette until evenly coated.

Add Feta and Serve
Gently fold in feta. Taste and adjust seasoning if needed. Serve immediately or chill for later.
