Mediterranean Quesadillas with Spinach, Feta, Mozzarella, and Red Onion

Delicious Mediterranean quesadillas filled with fresh spinach, creamy mozzarella, tangy feta, and zesty red onion.

Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. Prepare your ingredients by chopping the spinach, dicing the tomato, and thinly slicing the red onion.
  2. Sauté the spinach in olive oil over medium heat for 2-3 minutes until wilted.
  3. Assemble the quesadillas by layering mozzarella, sautéed spinach, feta, tomato, and red onion on one half of each tortilla.
  4. Fold the tortillas in half and cook in the skillet for 3-4 minutes on each side until golden brown.
  5. Slice the quesadillas and serve with tzatziki sauce or a yogurt dip.

Notes

Feel free to add additional veggies like grilled zucchini or spices for a kick. Perfect for lunch or a light dinner!
