1 lb ground beef (or ground turkey, chicken, or pork)
3 medium potatoes, peeled and diced
1 medium onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 cup beef broth (or chicken broth)
1 cup shredded cheddar cheese (or your favorite blend)
1 tbsp olive oil (for cooking)
Fresh parsley, chopped (optional, for garnish)
Heat olive oil in a large skillet over medium heat.
Add potatoes and cook for 8–10 minutes, stirring occasionally until lightly golden.
Add chopped onion, bell pepper, and garlic. Sauté for 3–4 minutes until softened.
Push veggies to one side, add ground meat, and cook until browned. Drain excess fat if needed.
