Ultimate Layered Breakfast Lasagna: Pancake Sausage Casserole

A delightful layered casserole featuring fluffy pancakes, savory sausage, and creamy cheese, perfect for brunch.

  • 3 cups pancake mix
  • 2½ cups milk
  • 3 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • lbs breakfast sausage, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup cream cheese, softened (optional)
  • Butter for greasing
  • Extra cheese for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish by greasing it with butter or cooking spray.
  3. Cook the breakfast sausage in a skillet over medium heat until browned.
  4. Mix together the pancake mix, milk, eggs, melted butter, and vanilla extract until smooth.
  5. Layer about a third of the pancake batter in the baking dish; top with half of the sausage and half of the cheeses.
  6. Repeat until ingredients are used, finishing with the pancake batter on top.
  7. Bake covered with foil for 25 minutes, then uncovered for another 10-15 minutes until golden.
  8. Let it rest for 10 minutes before slicing.

Notes

Serve with maple syrup or powdered sugar. You can add fresh fruit or Greek yogurt on the side.
