2 pounds baby potatoes, halved
3 tablespoons olive oil
½ cup grated Parmesan cheese
2 teaspoons garlic powder
1 teaspoon dried thyme or rosemary
Kosher salt & freshly cracked black pepper, to taste
Optional: chopped parsley or extra cheese for garnish
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
In a large bowl, toss potatoes with olive oil, Parmesan, garlic powder, herbs, salt, and pepper until well coated.
