These rainbow-stacked sugar cookies are more than just pretty—crack one open and out spill mini M&Ms or your favorite bite-sized sweets. A party in every bite, these playful cookies are perfect for birthdays, holidays, or any celebration that needs a sweet surprise!
For the Cookie Dough:
1 cup unsalted butter, softened
1 cup granulated sugar
1 egg
1½ tsp vanilla extract
2¾ cups all-purpose flour
½ tsp baking powder
¼ tsp salt
Food coloring (red, blue, green, yellow, purple)
For Assembly:
Mini M&Ms, candy buttons, sprinkles, or other small candies
Icing or melted white chocolate (to “glue” layers)
Make Dough: Cream butter and sugar until fluffy. Mix in egg and vanilla. Stir in flour, baking powder, and salt.
Divide & Color: Split dough into 5 bowls and dye each a different color. Chill 30 mins.
Roll & Cut Shapes: Roll each color to ¼-inch thick. Use a piñata cookie cutter or any fun shape. For each cookie, cut 3 identical shapes—cut a small center hole out of the middle cookie for the candy space.
Bake: 350°F (175°C) for 8–10 mins. Let cool completely.
Assemble: Use icing to stack one full cookie, one hollowed cookie (fill the center with candy), then top with another full cookie. Press gently.
Decorate: Add icing details or edible glitter for extra pizzazz!
