  • 1 cup sugar
  • 1/2 cup butter, softened

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9-inch cake pan by greasing and flouring it.
  3. Mix together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, followed by the vanilla extract.
  5. Combine the flour, baking powder, baking soda, and salt in a separate bowl.
  6. Alternate adding the dry mixture with the crushed pineapple to the butter-sugar mixture.
  7. Fold in the shredded coconut until evenly distributed.
  8. Bake for about 30-35 minutes, or until a toothpick comes out clean.
  9. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Frost with cream cheese frosting, if desired.
