Potatoes, Onions, and Smoked Polish Sausage

A comforting dish of potatoes, onions, and smoked Polish sausage that brings warmth and nostalgia to any meal.

  • 1 large yellow onion, finely sliced
  • 2 tablespoons butter or extra-virgin olive oil, divided
  • pounds Polish-style smoked sausage, cut into ½-inch thick rounds
  • Freshly cracked black pepper, to taste
  • ½ teaspoon smoked paprika (optional)
  • Sea salt, to taste
  • 2 pounds Russet or Yukon Gold potatoes, peeled and cubed
  • 1 teaspoon garlic powder
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Heat 1 tablespoon of butter (or olive oil) in a large skillet over medium heat. Add onions and sauté for about 8–10 minutes until soft and golden.
  2. Add the smoked sausage rounds and cook for 5–7 minutes until browned.
  3. Sprinkle in the black pepper, sea salt, and smoked paprika. Stir to combine.
  4. Once the sausage is cooked, add cubed potatoes and garlic powder, stirring well.
  5. Pour in enough water to just cover the potatoes, bring to a boil, then reduce heat and simmer for 25–30 minutes until fork-tender.
  6. Remove the lid and let any excess liquid evaporate if needed.
  7. Garnish with chopped parsley before serving.

Notes

A squeeze of lemon or a drizzle of balsamic vinegar just before serving elevates the flavors.
