Pumpkin Cookies:
5 cups all-purpose flour
2 tsp baking powder
2 tsp baking soda

1 cup packed light brown sugar
2 ½ cups canned pumpkin purée

16 oz cream cheese, softened
½ cup unsalted butter, softened
2 tsp vanilla extract
3 ½ cups powdered sugar, sifted
