Quick Tuna Melt Wrap

A delightful twist on a classic tuna melt, this wrap is packed with flavors and perfect for a quick and comforting lunch.

  • 1 can (5 oz) skipjack or yellowfin tuna, drained
  • 2 tablespoons plain Greek yogurt
  • 1/2 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/4 cup corn
  • 1/4 cup finely diced red onion
  • 1 tablespoon dill relish or capers, chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • 1 large burrito-sized tortilla or wrap
  • 1/4 cup shredded mozzarella cheese
  • Olive oil, for brushing

Instructions

  1. Prep Your Ingredients: Start by gathering everything together. Open that can of tuna and drain it well. In a mixing bowl, toss the tuna, Greek yogurt, Dijon mustard, lemon juice, corn, red onion, dill relish, garlic powder, and black pepper together.
  2. Taste and Adjust: Take a small spoonful of your tuna mixture and taste it. Adjust to your liking.
  3. Assemble the Wrap: Lay your tortilla flat on a clean surface. Spoon a generous amount of the tuna mixture onto the center of the tortilla, then sprinkle the shredded mozzarella on top.
  4. Roll It Up: Fold in the sides of the tortilla and roll it up from the bottom, tucking the filling in as you go.
  5. Heat it Up: In a skillet over medium heat, brush a little olive oil. Place your wrapped tuna melt seam-side down and toast for 3-4 minutes until golden brown. Flip and cook until the cheese melts, about another 3-4 minutes.
  6. Serve and Savor: Remove the wrap from the skillet, slice it in half diagonally, and serve it warm.

Notes

For a cheerful presentation, serve with a colorful salad or crunchy carrot sticks. Add a side of ranch or extra Dijon for dipping.
