Rice Noodle Stir-Fry

A quick and delicious Rice Noodle Stir-Fry featuring colorful vegetables and your choice of protein, perfect for weeknight dinners and gatherings.

  • 8 oz flat rice noodles
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 cup protein (tofu, chicken, or shrimp)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp fresh ginger, grated

Instructions

  1. Cook the Rice Noodles: Bring a pot of water to a boil. Add the flat rice noodles and let them cook according to package directions, usually about 4-6 minutes. Chef tip: Stir them occasionally to prevent sticking! Once they’re done, drain and rinse under cold water to stop the cooking process. Set aside.
  2. Prep Your Veggies: While your noodles are cooking, slice your bell peppers, carrots, and broccoli. Here’s my little hack: For quicker prep, you can buy pre-sliced veggies at the store.
  3. Sauté the Protein: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. If you’re using chicken or shrimp, sauté for about 3-5 minutes until just cooked through, then remove and set aside. If using tofu, cook until golden brown on all sides.
  4. Stir-Fry the Veggies: Add the remaining sesame oil to the pan, then toss in the ginger and sauté for about 30 seconds until fragrant. Add your sliced veggies to the pan. Cook them for about 3-4 minutes, stirring constantly.
  5. Combine Everything: Add the cooked noodles back into the pan along with the sautéed protein. Pour in the low-sodium soy sauce and toss everything together. Cook for another 2-3 minutes until everything is heated through.
  6. Taste and Adjust: Before serving, taste your stir-fry. If you want it saltier, add a splash more soy sauce. Always season to your preference!
  7. Plate and Enjoy: Serve your Rice Noodle Stir-Fry in large bowls. Garnish with sesame seeds or chopped green onions for a burst of flavor.

Notes

Feel free to add any seasonal vegetables you have on hand. This dish is adaptable to your preferences and can be made gluten-free by using tamari.
