Salsa, Ham, and Egg Roll-Ups

This quick and tasty recipe was born on a busy weekday morning when all we had were a few fridge staples—and it’s been a breakfast favorite ever since. Packed with protein and a touch of spice, these roll-ups are satisfying, low-carb, and perfect for on-the-go mornings or a light brunch with flair.

1 tbsp butter

4 large eggs

¾ cup shredded cheddar cheese (divided: ¼ cup and ½ cup)

¼ cup salsa (your favorite brand, like Pace)

5 slices deli ham

Instructions

In a bowl, whisk eggs. Melt butter in a nonstick skillet over medium heat.

Pour in eggs and cook gently, scrambling until just set. Remove from heat and stir in ¼ cup cheese.

Lay out ham slices. Place spoonfuls of egg mixture in the center of each slice.

Add a little salsa and sprinkle with remaining cheese.

Roll up each slice and secure with a toothpick if needed.

Warm in the skillet or oven until cheese melts. Serve hot.
