  • 1 pound raw shrimp, peeled and deveined
  • ½ cup mayonnaise
  • 2 ribs celery, finely diced
  • 2 tablespoons red onion, finely minced
  • 1 tablespoon fresh dill, chopped
  • 1½ tablespoons lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard (optional)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper, freshly ground
  • 1 tablespoon parsley or capers (optional)

Instructions

  1. Start by boiling a pot of salted water. You want it salty like the sea! Once it’s at a rolling boil, add the shrimp.
  2. Cook for about 2-3 minutes until they turn pink and opaque.
  3. Drain the shrimp in a colander and run them under cold water to stop the cooking process.
  4. Toss the shrimp with a little lemon juice to add brightness while they cool down completely.
  5. In a separate large mixing bowl, combine mayonnaise, lemon juice, Dijon mustard (if using), salt, and black pepper.
  6. Whisk until smooth before adding shrimp for even distribution.
  7. Add the cooled shrimp to the dressing along with celery, red onion, and fresh dill.
  8. Gently fold everything together using a spatula, careful not to break up the shrimp.
  9. Taste your salad and adjust with more salt, pepper, or lemon juice if desired.
  10. Cover the bowl and refrigerate for at least 30 minutes for flavors to marry together.
