A delightful and creamy keto-friendly broccoli salad with crispy bacon bits, sharp cheddar cheese, and fresh broccoli.

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup red onion, diced
  • 1/4 cup bacon bits (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sweetener (like erythritol or stevia)
  • Salt and pepper to taste

Instructions

  1. Start by washing your fresh broccoli florets thoroughly under cold water. Once rinsed, cut them into bite-sized pieces.
  2. If you’re adding bacon bits, now’s the time to fry them up in a skillet over medium heat until crispy.
  3. In a separate bowl, combine the mayonnaise, apple cider vinegar, and sweetener. Mix well until smooth and creamy.
  4. In a large mixing bowl, add your chopped broccoli, shredded cheddar cheese, diced red onion, and crispy bacon. Pour the dressing over the salad and toss everything together.
  5. Once everything is combined, cover the bowl and let the salad chill in the refrigerator for at least 30 minutes.
  6. Once chilled, give the salad a quick toss before serving. Transfer it to a serving bowl, garnishing with a sprinkle of additional cheese or bacon bits.

Notes
